Missultin Slow Lake Cuisine
Have you ever heard about slow lake cuisine?
It was a first for me, but that's how the Missultin Restaurant defines themselves - a restaurant walking distance from the Lago Maggiore located in the picturesque Vira Gambarogno at the Italian part of Switzerland.
The Restaurant by Alessandro Fumagalli opened its Doors this summer with the goal of "celebrat(ing) the revival of the origins through the rediscovery of essentials and raw flavours".
The location promises a charming environment, with typical ticinese stone tables outside, grape leaves hanging from above, and three different indoor ambiences. The Restaurant is accessible by car or boat.

The food is carefully prepared with fresh and, as much as possible, local ingredients. Alessandro showed us his behind the scenes in the kitchen, with fermented strawberries and black garlic. A unique experimental preparation.
The results, when served to the customers, look colourful and mouthwatering. All served in beautiful ceramic tableware from the local artist, Dominique Ullmann.
Missultin, the name of the Restaurant, is a lake fish from the region, also known as a lake sardine. The smell and taste are also of such. On their website, one can read a bit more about the captivating background story dating back to Alessandro's childhood.
A gem in an inconspicuous village which is worth the visit, maybe to celebrate a special occasion or to give oneself a treat.
